By now you all know the outcome of the Utah/BYU game. What, you don't know??? After all of the trash talking BYU fans WAH WAHED for months about how great their team is, how they were going to beat us, again, for the third year in a row...we beat them, by 24 points. So, It's the Vegas bowl for them (again), and drum roll...BCS for us!!!!!!!!!!! The Sugar Bowl, to be exact. In honor of the Utes going to a BCS game for the second time in four years, I give you...BCS Biscuits. Made these the other night, and added a couple of teaspoons of pesto- they were delish. Yes, almost as good as the win over BYU.
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1/8 teaspoon cayenne
1/4 generous cup shortening, I like Butter Flavor Crisco
1 cup grated extra sharp cheddar
3/4 cups buttermilk
2 teaspoons pesto, optional
Combine first 4 ingredients. Cut in shortening until mixture resembles crumbs. Stir in cheese, pesto, if using, and buttermilk. Roll out to 1/2 inch thickness on floured surface. Using biscuit cutter or glass cut into shapes and place on lightly greased cookie sheet. Bake at 400 degrees for 15 minutes or until golden on top and bottom.

ReplyDeleteI have not made suckers for years...I made them a couple of times in our early married days. Did you check Martha Stewarts site? She covers almost everything! Glad you like the blog. It's been a fun way to connect with friends and family, and finally get my recipes typed out!

ReplyDeleteA. For some reason I was thinking that Amy meant, "do you have a recipe for PEOPLE who are suckers" like, y'know, the old P.T. Barnum quote, "There's a sucker born every minute" kind of a thing. I thought it had something to do with her being a BYU fan for a minute. . . .
B. You said such KIND things with the lemon soup recipe, (I love you, you're a sweetie) and THEN. . . . .such insulting, inflammatory things with the cheese biscuit recipe. I think you have multiple-personality disorder. I'm calling Melanie's neighbors.
P.S. I'm still making the yummy biscuits. But I'll be danged if we think of the Utes while we eat them.
