Belgian Waffles

It's the most wonderful time of the year!!" And I'm not talking about Christmas. I love that Staples commercial. Mothers everywhere are either singing this song, or crying as they drop their little elves off at school. The first day of school has never made me sad- until my kids started growing up and MOVING OUT. More about that later...I invited a few friends in our circle over for a "back to school breakfast celebration" this week. We talked about what else? Our kids, their teachers, how sad/happy/relieved we all are. This is a wonderful Belgian Waffle recipe. It's easy, no separating the eggs- a common method in waffle recipes. The cake flour makes the waffles tender on the inside, but they still have a crispy outside. The best way to eat these waffles is with fruit- I like fresh strawberries or the frozen tri berry mix at Costco with some sugar, and whipped cream. Or a scoop of vanilla ice cream!



Belgian Waffles

2 cups cake flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar
1/2 cup buttermilk
1 cup milk
2 egg, beaten
1/4 cup melted butter
Nonstick vegetable spray for coating waffle iron
Confectioners' sugar
Fresh berries
Whipped cream


Preheat a waffle iron. In a large bowl, stir together the dry ingredients. Make a well in the center and add the buttermilk, milk, eggs, and melted butter. Mix together just until combined (DON'T OVERMIX THE BATTER!). The batter should look slightly lumpy.
Spray the waffle iron with the nonstick vegetable spray. Pour 3/4 cup of the batter or the amount recommended by the waffle-iron maker onto the waffle iron; bake as directed by the manufacturer.

Dust finished waffles with confectioners' sugar and top with fresh berries, whipped cream, or ice cream, if desired. Serve hot off the griddle.
