The recipe- I made this yummy Strawberry cake a few weeks ago, by request for a family wedding celebration. It's really simple, and uses fresh strawberries in the cake and the frosting. Great for a summer celebration or a girl birthday. Or a Blogiversary ;)

Fresh Strawberry-Jello Cake with Strawberry Cream Cheese Frosting
A Bountiful Kitchen, adapted (quite a bit) from Paula Deen
1 (18.25-ounce) box white cake mix*

1/4 cup flour
1 small (3-ounce) box strawberry-flavored instant gelatin
8-9 oz fresh strawberries (weight after trimming tops off) about 1 small basket, crushed or blended
4 large eggs
1/2 cup vegetable oil
1/4 cup water

Strawberry cream cheese frosting, recipe follows
Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened (make sure this is room temperature)
about 2-3 fresh strawberries, cleaned and trimmed, chopped
5 cups powdered sugar

dash of salt
small amount of milk or cream to thin the frosting if needed
sliced or whole strawberries, for garnish, optional
Preheat oven to 350 degrees F. Line 2 (9-inch) round cake pans with parchment paper, grease pans.
In a large bowl, combine cake mix, flour and gelatin. Add pureed strawberries, eggs, oil, water and vanilla; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 30-35 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, cool completely on wire racks.
Fresh Strawberry Cream Cheese Frosting:

In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in chopped strawberries. Gradually add powdered sugar and dash of salt, beating until smooth. Thin with milk or cream if needed.
Spread frosting in between layers and on top and sides of cake. Garnish with fresh strawberries, if desired.

Tips:
-This recipe was tweaked according to several suggestions by reviewers on the Food Network site.
-*I used a Betty Crocker Cake mix. The suggested cake mix weight in the original recipe is 18.25 oz. However, I found only generic (store) brands in this size of cake mix. I opted to use a popular name brand instead. I also used Jello brand gelatin.
-The cake will have a bright pink/red color.

Happy celebration day! I love all cakes, but one that my mom made when I was growing up is my favorite. You start with a lemon cake mix, then comes a cream cheese/pudding layer, crushed pineapple after that, and then cool whip on top. Yummy! I love Tillamook products. What a fun giveaway.

ReplyDeleteI love a cake my mom makes with a can mandarin oranges mixed into a yellow cake mix. It is a triple layer cake with cool whip frosting with a pkg of vanilla pudding mixed in and a can of crushed pineapple! yummmmmmm!

ReplyDeleteMy favorite cake is a white cake, poked with holes and then strawberry gelatin poured over the top. Refrigerate and top with a creamy frosting that has whipped cream and sour cream in it, followed by fresh strawberries macerated in sugar. So yummy!

ReplyDeleteSecond, my favorite cake of all time is not one my mom made or that I make, it is a store bought cake from a bakery in Syracuse, NY where I am from (I live in Alaska now) called Harrison Bakery. The icing is soooo thick and sweet it seems I am the only one who loves it :) My sister bought one for my baby shower a couple years ago and everyone left some of the icing...I am talking SUPER rich, but my icing was gone.
Lastly, funny that a bar/restaurant here in Anchorage has a huge block of Tillamook cheese that patrons go up and cut slices from. There is a disclaimer to not eat the cheese so says the health department. Of course, no one pays attention to that!

ReplyDeleteSo, I love cakes- a slight obsession of mine if I am slightly honest. I love making new ones and trying awesome combos. Through all the cakes I bake through the year, I always ask for the same awful cake for my birthday, year after year...lemon cake with sour cream chocolate frosting. Gross right? But I am addicted to it! (I blame my childhood!)

Red Velvet Cake is by far the best cake out there, and hands down my favorite cake! First off, have you ever seen an unhappy person eating Red Velvet Cake? I didn't think so! Also Red Vlevet is almost always paired with cream cheese frosting, and let's be honest cream cheese frosting is the best kind of frosting out there. Lastly, I love Red Velvet because of it's color! Red is such a great color it makes me think of my dear old crimson (the University of Utah). Go Utes and Cake!
